Triple Chocolate Mini Cheesecakes

The following cheesecakes are an ideal chocoholic’s dream dessert. They can be the star of every party due to their sophisticated and elegant design. You can make them in advance and just store in refrigerator for a few days before serving.
Directions
Preparing the Crust:
Spray 12-molds muffin pan with cooking spray.
Place chocolate wafers in food processor and mix until finely crushed into crumbs. Put in a bowl and add sugar and melted butter. Stir to combine.
Separate the crust in 12 equal parts and press onto the bottom of each of the 12 into the muffin molds. Place the muffin pan in refrigerator while you are preparing the filling.
Preparing the Filling:
Preheat the oven to 200 degrees C.
Put chocolate chips in a small skillet and heat over low heat until completely melted. Set aside.
Using electric mixer, beat cream cheese until smooth. Add sugar, flour, sour cream and vanilla extract.
Whisk the eggs into a separate bowl and add to the mixture. Keep working with the electric mixer until everything is finely combined. Pour the chocolate and stir to combine.
Remove the muffin pan with the crust from refrigerator and pour the batter into each hole.
Put in the oven and bake for 40 minutes. Cool completely. Remove each mini cheesecake from the pan and turn upside-down onto a plate.
Preparing the Topping (Glaze):
Place chocolate chips into a bowl. Put the cream into a small skillet and heat over medium heat. When hot, pour onto the chocolate chips. Add corn syrup and stir until the chocolate melts completely.
Pour the mixture on the top of each mini cheesecake and decorate with berries. Chill before serving.

For the Crust:
600 gr chocolate wafers (See homemade edition)
150 gr butter (unsalted, melted)

1 kg cream cheese (Philadelphia, at room temperature)
1 tablespoon flour (all-purpose)
