Marshmallow Filled Chocolate Cupcakes

Marshmallow Filled Chocolate Cupcakes are rich, super chocolatey dessert, loaded with soft marshmallow filling inside and topped with sweet and creamy chocolate frosting swirl.

  • Yields: 24 cupcakes


For the cupcakes:

Pre- heat oven to 350F.

In the bowl of a mixer, mix together the sugar, flour, cocoa, baking powder, baking soda and salt.

Add in the eggs and mix.

Add in the milk, oil and vanilla; mix until everything is combined. Mix for 2-3 minutes

Mix in the boiling water. (Batter will be very VERY thin!)

Line a muffin/cupcake tin with liners.

Fill each cupcake liner with a little less than 1/4 cup of batter. (About 2/3s of the way full)

Bake for 18 minutes or until done. Cool Completely.

For the frosting:

Pour melted butter into the bowl of a mixer., Mix in the cocoa.

Add in 3 cups of powered sugar. Mix well. Add in 1/3 cup of milk and mix well. Add in the rest of the powered sugar and mix well. Add in the rest of the milk and mix well. Stir in vanilla.

To make the frosting thicker add more powdered sugar.

To make the frosting thinner add more milk.

For the marshmallow filling:

In a large bowl, combine marshmallows and light corn syrup.

Heat for about 1 minutes. Stir well. Add to the bowl of a mixer. Mix in 2 cups of powdered sugar. Mix well.

To assemble:

Remove the cores of the cupcakes with a small knife. Will with marshmallow filling and place cupcake "plug" back into cupcake onto of filling.

Frost the cupcakes and top with chocolate pearls!


For the cupcakes:

2 cups sugar

1 & 3/4 cups flour

3/4 cup cocoa

1.5 teaspoons baking powder

1.5 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla

1 cup boiling water

For the frosting:

1 stick of butter, melted

3/4 cup cocoa

6 cups powdered sugar (may need more to thicken depending on preference)

2/3 cup milk

2 teaspoon vanilla

For the marshmallow filling:

10 large marshmallows

2 tablespoons light corn syrup

2 cups powdered sugar

2 tablespoons milk
